Your account will be upgraded automatically if you buy HoT, so it's really a matter of whether you don't want to try playing without additional features. The actual content that HoT offers really isn't relevant until you hit the level cap anyway (though it's worth pointing out that the campaign is much better). Regardless, you can freely start playing the core game to see what it's like any time.
Season 2 of the Living World is a separate purchase that consists of story events and zones taking place between the main campaign and HoT. Again, it's not relevant until you hit level 80.
Guardians tend to be more interesting than thieves in all content. They're heavy on frontline support and damage, tend to have a higher learning curve, and are also sometimes nigh unkillable in certain PvP situations.
